Ingredients

Burger Patties

  • 2 pounds lean ground beef
  • 1 packet dried onion soup mix

Vegetables

  • 1½ pounds baby gold potatoes, quartered
  • 12 ounces frozen crinkle cut carrots
  • 1 medium red onion, large diced
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • ½ tsp smoked paprika

Topping

  • 6 slices Colby Jack cheese
  • Cooking spray (for foil)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to ensure it's ready for baking your foil packets.
  2. Prepare Burger Patties: In a large bowl, combine the ground beef and dried onion soup mix. Mix well to distribute seasoning evenly. Divide the mixture into 6 equal portions and shape each into a patty. Set aside.
  3. Prepare Vegetables: In another large bowl, combine quartered baby gold potatoes, frozen carrots, diced red onion, olive oil, garlic powder, kosher salt, black pepper, and smoked paprika. Toss to coat all vegetables evenly with seasoning and oil.
  4. Assemble Foil Packets: Lay out 12×18 inch pieces of heavy-duty aluminum foil on your counter. Spray each piece with cooking spray to prevent sticking. Place one-sixth of the vegetable mixture in the center of each foil sheet, then place a burger patty on top of the vegetables. Fold the foil around the ingredients tightly to form sealed pouches.
  5. Bake the Packets: Arrange the foil packets on sheet trays and bake in the preheated oven for 45 minutes, or until the vegetables are tender and the internal temperature of the burgers reaches at least 160°F (71°C) for safe consumption.
  6. Add Cheese and Melt: Carefully open each foil pouch and place a slice of Colby Jack cheese on top of each burger patty. Loosely re-cover the packets with foil and return to the oven for about 5 minutes, or until the cheese has melted.
  7. Serve: Serve the foil packets hot, allowing each person to open their own flavorful bundle packed with juicy burger, melty cheese, and tender veggies.

Notes

  • Make sure to use heavy-duty foil to prevent tearing during baking and handling.
  • Check the internal temperature of burgers with a meat thermometer to ensure food safety.
  • For variations, consider swapping Colby Jack with cheddar or pepper jack cheese for different flavor profiles.
  • These packets can also be cooked on a grill over medium heat for about 25-30 minutes, turning halfway through for a smoky flavor.
  • Leftovers can be stored in the refrigerator for up to 3 days; reheat covered in the oven to maintain moisture.
