Ingredients

Steak Marinade

  • 1 lb steak (such as flank or skirt)
  • 2 tablespoons lime juice
  • 1/4 cup chopped fresh cilantro
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper, to taste

Cauliflower Rice

  • 4 cups cauliflower rice (fresh or frozen)
  • 1 tablespoon olive oil
  • Salt and pepper, to taste

Toppings & Lime Crema

  • 1 avocado, sliced
  • 1/4 cup diced red onion
  • 1/2 cup diced bell pepper (any color)
  • 1/4 cup sour cream or plain yogurt
  • 1 tablespoon lime juice
  • 1 tablespoon chopped fresh cilantro
  • Salt and pepper, to taste

Instructions

  1. Marinate steak: In a bowl, combine lime juice, chopped cilantro, minced garlic, olive oil, salt, and pepper. Add the steak and coat evenly. Let it marinate for at least 10 minutes to absorb the flavors.
  2. Cook cauliflower rice: Heat olive oil in a skillet over medium heat. Add the cauliflower rice, season with salt and pepper, and sauté for about 5-7 minutes until tender but not mushy. Remove from heat and set aside.
  3. Sear steak and slice: In the same skillet over medium-high heat, sear the marinated steak about 3-4 minutes per side for medium-rare, or longer to your desired doneness. Let it rest for 5 minutes, then slice thinly against the grain.
  4. Mix lime crema: In a small bowl, combine sour cream or yogurt with lime juice, chopped cilantro, and a pinch of salt and pepper. Stir until smooth and creamy.
  5. Assemble bowls: Divide cauliflower rice into serving bowls. Top with sliced steak, avocado slices, diced red onion, and bell pepper. Drizzle with the lime crema and garnish with extra cilantro if desired. Serve immediately.

Notes

  • Use fresh lime juice for the best flavor in both the marinade and crema.
  • Adjust steak cooking time according to your preferred level of doneness.
  • Cauliflower rice can be made ahead and reheated for convenience.
  • For a dairy-free version, substitute sour cream with coconut yogurt.
  • This recipe is naturally low-carb and gluten-free.
