This simple and versatile 2 Ingredient Cottage Cheese Flatbread is an easy-to-make, protein-packed base perfect for pizzas, wraps, or a low-carb snack. Combining creamy cottage cheese and eggs, it creates a soft yet sturdy flatbread that can be seasoned to taste and customized with your favorite toppings.

Ingredients

Flatbread Base

  • 1 cup cottage cheese
  • 2 eggs
  • Seasoning to taste (optional, e.g., garlic powder, Italian seasoning)

Instructions

  1. Prepare the Oven and Pan: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper and lightly spray with cooking spray or rub a small amount of oil to prevent sticking.
  2. Make the Batter: In a food processor or blender, combine the cottage cheese, eggs, and any optional seasonings such as garlic powder and Italian seasoning. Pulse for about 30 seconds or until the mixture is smooth and creamy. Alternatively, use an immersion blender or NutriBullet to achieve a similar consistency.
  3. Shape the Flatbread: Pour the batter onto the prepared baking sheet and spread it evenly into a flat, round or rectangular shape according to your preference.
  4. Bake: Place the baking sheet on the center rack of the oven and bake for 25-35 minutes, or until the flatbread is golden brown and cooked through in the center.
  5. Cool: Remove from the oven and allow the flatbread to cool for a few minutes to set and make it easier to handle.
  6. Serve or Customize: Use the flatbread as a base for pizza by adding sauce, cheese, and toppings, then return to the oven for a few minutes to melt the cheese. For wraps, load with your favorite fillings, roll into a log, and slice down the center to create two wraps.

  • Seasonings are optional but recommended to enhance flavor; try garlic powder, Italian seasoning, or herbs of choice.

  • Use parchment paper or lightly oil the pan to prevent sticking.
  • This flatbread can be stored in the refrigerator and reheated before serving.
