A tropical and creamy coconut pineapple rice dish that combines fragrant basmati rice cooked in rich coconut milk with fresh pineapple, toasted coconut flakes, and zesty lime, perfect as a flavorful side or a light meal.

Ingredients

Rice and Liquid

  • 1 cup basmati rice
  • 1 cup full-fat coconut milk
  • 1 cup water
  • 1/2 teaspoon salt

Fruits and Aromatics

  • 1 cup chopped fresh pineapple
  • 1 teaspoon lime zest

Garnish

  • 2 tablespoons toasted coconut flakes
  • 2 tablespoons chopped cilantro or parsley

Instructions

  1. Rinse the rice: Place 1 cup of basmati rice in a fine mesh strainer and rinse under cold water until the water runs clear to remove excess starch and ensure fluffy rice.
  2. Combine ingredients and bring to boil: In a medium saucepan, combine the rinsed rice, 1 cup of full-fat coconut milk, 1 cup of water, and 1/2 teaspoon of salt. Heat over medium heat until the mixture comes to a gentle boil.
  3. Add pineapple and simmer: Stir in 1 cup of chopped fresh pineapple, cover the pot with a tight-fitting lid, reduce the heat to low, and allow the rice to simmer for 15 to 17 minutes until the liquid is absorbed and the rice is tender.
  4. Rest the rice: Turn off the heat and let the rice sit covered for 5 minutes to finish cooking and allow flavors to meld.
  5. Fluff and garnish: Fluff the rice gently with a fork, then fold in 2 tablespoons of toasted coconut flakes, 1 teaspoon of lime zest, and 2 tablespoons of chopped cilantro or parsley to add aroma and texture before serving.

Notes

  • Use fresh pineapple for the best flavor and texture.
  • To toast coconut flakes, place them in a dry skillet over medium heat and cook, stirring frequently, until golden and fragrant.
  • For a dairy-free and vegan dish, ensure the coconut milk is unsweetened and the toppings are plant-based.
  • Adjust salt to taste depending on coconut milk saltiness.
  • Can be served warm as a side dish or chilled as a refreshing salad.
