Dates and Filling

  • 9 squishy Medjool dates
  • 3 tablespoons peanut butter (or other nut butter)

Instructions

  1. Prepare the Dates: Use your fingers to split each Medjool date in half and carefully remove the pit from the center. You can also use a knife to cut the dates in half if preferred. Arrange the date halves cut-side up on a plate lined with parchment paper for easy cleanup.
  2. Add the Filling: Spoon roughly ½ teaspoon of peanut butter into the center of each date half. Then sprinkle chopped peanuts over the peanut butter to add a crunchy texture to every bite.
  3. Melt the Chocolate: Melt the dark chocolate chips using a double boiler method by boiling an inch of water in a small saucepan and placing a heat-safe bowl on top containing the chocolate chips. Stir continuously until the chocolate is smooth and fully melted. Alternatively, you can melt the chocolate in short bursts in the microwave, stirring in between.
  4. Drizzle and Finish: Using a spoon, drizzle the melted chocolate over the peanut butter-filled date halves, coating only the top. While the chocolate is still glossy, sprinkle flaky sea salt on top to enhance the flavor.
  5. Chill: Place the plate in the refrigerator for about 10 minutes or until the chocolate has firmed up. Once set, your Date Snickers are ready to enjoy. Store any leftovers in an airtight container at room temperature for up to a week or refrigerate for up to a month.
