Perfect for a cooling beverage on warm days, garnished with fresh mint and optional green food coloring for a vibrant look.

Ingredients

Syrup Ingredients

  • 4 medium Granny Smith apples, chopped, unpeeled
  • 1 cup granulated sugar
  • 1 cup water
  • 2 tablespoons freshly squeezed lemon juice
  • ¼ teaspoon citric acid (optional, for extra tartness)
  • ⅛ teaspoon salt

Beverage Ingredients

  • 4–6 cups sparkling water or club soda
  • Ice cubes, as needed
  • 1–2 drops green food coloring (optional, for vibrant color)
  • Fresh mint leaves (optional garnish)

Instructions

  1. Wash and chop apples: Thoroughly wash the Granny Smith apples and chop them into chunks without peeling.
  2. Blend apples: Place the chopped apples into a blender and pulse until they are broken down into small chunks.
  3. Simmer sugar and water: In a saucepan, combine the granulated sugar and water and bring to a simmer to dissolve the sugar completely.
  4. Add apples, lemon, and salt: Add the blended apple chunks, freshly squeezed lemon juice, and salt to the simmering sugar syrup.
  5. Simmer 15 minutes and cool 10 minutes: Let the mixture simmer gently for 15 minutes to extract flavors, then remove from heat and allow it to cool for 10 minutes.
  6. Strain syrup thoroughly: Strain the syrup through a fine mesh sieve or cheesecloth to remove solids and achieve a clear syrup.
  7. Stir in citric acid or coloring: Add the optional citric acid for extra tartness and 1–2 drops of green food coloring for a more vibrant appearance, mixing well.
  8. Combine syrup with soda: Mix 3 to 4 tablespoons of the prepared green apple syrup into each cup of sparkling water or club soda as per taste.
  9. Serve with ice and garnish: Pour over ice cubes in serving glasses and garnish with fresh mint leaves if desired. Enjoy immediately.

Notes

  • The citric acid is optional but enhances the tartness and preserves the brightness of the apple flavor.
  • Adjust the amount of syrup according to your preferred sweetness and tartness balance.
  • The green food coloring is purely for aesthetic appeal and can be omitted.
  • Fresh mint leaves add a nice aroma and freshness as a garnish.
  • Store any leftover syrup in a sealed container in the refrigerator for up to 5 days.
