  • 4 cups (32 fl oz or 950ml) filtered or spring water
  • Ice cubes, for serving

Instructions

  1. Juice the Lemons: Roll each lemon firmly on the counter to loosen the juice. Cut them in half and use a juicer or reamer to extract about 1 cup (240ml) of fresh lemon juice. Strain out any seeds and set the juice aside.
  2. Simmer Lavender and Herbs: In a medium saucepan, combine 4 cups (950ml) of filtered water with the dried or fresh lavender and fresh herb sprigs. Warm over medium heat until it reaches a gentle simmer, avoiding a vigorous boil to prevent bitterness. Let the mixture steep gently for 5 minutes to infuse the flavors.
  3. Add Honey: Remove the saucepan from the heat. Stir in 1/3 cup (113g) of raw honey until fully dissolved into the herbal water. Taste and adjust sweetness by adding more honey a teaspoon at a time if desired.
  4. Strain the Infusion: Pour the lavender and herb mixture through a fine mesh strainer or cheesecloth into a large pitcher. Press gently on the solids to extract all the infused flavor, then discard the solids.
  5. Combine Lemon Juice: Add the freshly squeezed lemon juice to the pitcher and stir gently to combine all ingredients evenly.
  6. Chill the Lemonade: Refrigerate the lemonade for at least 1 hour to allow the flavors to meld together and to chill thoroughly. If you are short on time, serve the lemonade immediately over plenty of ice cubes.
  7. Serve and Garnish: Pour the chilled lemonade over ice cubes in glasses. Garnish with lemon slices and extra fresh herb sprigs for an elegant and refreshing presentation.
