Lavender Rose Moon Mocktail is a calming, floral sparkling beverage featuring a homemade lavender syrup infused with rosewater, fresh lemon juice, and sparkling water. This refreshing, non-alcoholic drink offers delicate floral notes and a touch of sweetness, perfect for a relaxing moment or elegant entertaining.

Ingredients

For the Lavender Syrup

  • 1 tablespoon dried culinary lavender
  • 1/4 cup honey or simple syrup
  • 1/2 cup water
  • 1/2 to 1 teaspoon rosewater (adjust to taste)

For the Mocktail

  • 2 tablespoons fresh lemon juice per serving
  • 6–8 ounces cold sparkling water or club soda per serving
  • Ice (preferably clear cubes for presentation)
  • Optional: a splash of unsweetened cranberry or pomegranate juice, or a drop of natural purple food coloring
  • Garnishes: lemon wheel, edible dried rose petals, or fresh lavender/rosemary sprig

Instructions

  1. Make the lavender syrup: In a small saucepan, combine 1/2 cup water and 1/4 cup honey or sugar. Warm over low heat, stirring until the sweetener dissolves completely. Remove from heat, add 1 tablespoon dried culinary lavender, and steep for 10–15 minutes to infuse the flavors. Strain the mixture to remove lavender buds and let the syrup cool completely.
  2. Add a whisper of rose: Stir 1/2 teaspoon of rosewater into the cooled lavender syrup. Taste and add up to another 1/2 teaspoon if you prefer a stronger rose aroma, adding slowly as rosewater can be quite potent.
  3. Prep your glass: Fill a chilled highball or stemless wine glass with ice cubes. For a soft moonlit hue, optionally add a tiny splash of unsweetened cranberry juice or a drop of natural purple food coloring at this stage.
  4. Build the drink: Pour 1 to 1.5 ounces of the lavender-rose syrup into the glass followed by 2 tablespoons of fresh lemon juice, combining the floral, sweet, and tart flavors.
  5. Top with bubbles: Gently add 6 to 8 ounces of cold sparkling water or club soda to the glass. Stir gently once or twice to mix without losing carbonation.
  6. Garnish and serve: Finish by garnishing with a lemon wheel and a pinch of edible dried rose petals or a small sprig of fresh lavender or rosemary. Serve immediately and adjust sweetness or citrus to taste if desired.

Notes

  • Use high-quality dried culinary lavender suitable for consumption to avoid any bitter or medicinal flavors.
  • Taste and adjust the rosewater carefully; too much can overpower the drink.
  • Clear ice cubes improve the visual appeal but regular ice works perfectly well.
  • For a vegan option, substitute honey with simple syrup or agave nectar.
  • Experiment with cranberry or pomegranate juice splash for subtle color and added tartness.
