Ingredients

Fish

  • 1.5 lb Cod fillet pieces, 4-6 pieces

Lemon Sauce

  • 5 tbsp fresh lemon juice
  • 5 tbsp extra virgin olive oil
  • 2 tbsp melted butter
  • 5 garlic cloves, minced

For Coating

  • 1/3 cup all-purpose flour
  • 1 tsp ground coriander
  • 3/4 tsp sweet Spanish paprika
  • 3/4 tsp ground cumin
  • 3/4 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Preheat Oven: Preheat your oven to 400 degrees F to prepare for baking the cod fillets.
  2. Prepare Lemon Sauce: In a shallow bowl, mix together the fresh lemon juice, extra virgin olive oil, and melted butter, but do not add the garlic yet. Set this mixture aside.
  3. Mix Coating Ingredients: In another shallow bowl, combine the all-purpose flour, ground coriander, sweet Spanish paprika, ground cumin, salt, and black pepper. Place this bowl next to the lemon sauce for easy access.
  4. Coat the Fish: Pat the cod fillets dry with paper towels. Dip each piece into the lemon sauce mixture, then coat thoroughly with the seasoned flour mixture. Shake off any excess flour. Keep the lemon sauce for later use.
  5. Sear the Fish: Heat 2 tablespoons of olive oil in a cast iron skillet or another oven-safe pan over medium-high heat. When the oil is shimmering but not smoking, add the cod fillets. Sear each side for about 2 minutes until they develop a golden color but remain undercooked. Then remove the skillet from the heat.
  6. Prepare Garlic Lemon Drizzle: Add the minced garlic to the remaining lemon sauce mixture and stir well.
  7. Drizzle and Bake: Pour the garlic lemon sauce evenly over the seared cod fillets in the skillet. Transfer the skillet to the preheated oven and bake for approximately 10 minutes, or until the fish flakes easily with a fork. Begin checking a bit earlier to avoid overcooking.
  8. Garnish and Serve: Once baked, remove the skillet from the oven. Sprinkle the chopped fresh parsley on top of the fish for a vibrant finish. Serve immediately while hot and fresh.
