This Easy Simple Mango Pudding is a creamy, smooth dessert made with fresh ripe mangoes and coconut milk, set with gelatin for a delightful tropical treat. Perfectly sweetened and chilled, it offers a refreshing finish to any meal and can be made dairy-free by opting for coconut milk throughout.

Ingredients

Mango Puree

  • 12 oz fresh, fully ripe and tender mangoes, peeled, pitted, and sliced

Pudding Mixture

  • 0.54 cups full-fat coconut milk (can substitute evaporated milk, heavy cream, or evaporated coconut milk)
  • 2 tablespoons cold water
  • 1.5 tablespoons white granulated sugar
  • 1.5 tablespoons gelatin powder

To Serve

  • 4 tablespoons evaporated milk or coconut milk (for dairy-free version)

Instructions

  1. Prepare Mango Puree: Peel, pit, and slice the ripe mangoes into small pieces. Transfer them to a blender or food processor and blend for at least 1 minute until very smooth to break up the mango fibers. For an extra smooth texture, strain the mango purée through a fine sieve.
  2. Bloom Gelatin: In a large bowl, combine cold water and gelatin powder. Stir for 30-45 seconds until it thickens into a gel-like consistency. The gelatin may have a faint smell that will dissipate when combined with other ingredients.
  3. Mix Ingredients: Add white granulated sugar, coconut milk, and the mango purée to the gelatin mixture. Stir thoroughly until the mixture is smooth and well combined.
  4. Heat Mixture: Transfer the combined mixture to a small pot and heat over medium-low heat. Whisk gently until the gelatin is fully dissolved and the pudding mixture becomes smooth and creamy, about 3-4 minutes. Important: Do not let the mixture boil or simmer to avoid curdling.
  5. Pour and Set: Pour the pudding mixture evenly into four greased serving bowls or silicone molds. Remove any air bubbles on the surface with a spatula and smooth the tops. Optionally cover with plastic wrap.
  6. Chill: Refrigerate the pudding for at least 6 hours or overnight until fully set and firm.
  7. Serve: Serve the chilled mango pudding with 1 tablespoon of evaporated milk or coconut milk over each serving for added creaminess and flavor.
