Pineapple Chicken and Rice is a sweet and savory one-pan meal that combines tender chicken with juicy pineapple chunks, all tossed in a flavorful pineapple-soy sauce. This easy-to-make dish offers a perfect balance of tropical sweetness and umami, making it an ideal quick dinner option served over warm rice.

Ingredients

Chicken

  • 1 lb (450 g) chicken breast or thighs, diced
  • 1 tablespoon oil
  • Salt and pepper to taste

Rice and Pineapple

  • 2 cups cooked rice (white, jasmine, or brown)
  • 1 cup pineapple chunks

Sauce

  • 1/2 cup pineapple juice
  • 1/4 cup soy sauce
  • 2 tablespoons honey or brown sugar
  • 1 tablespoon cornstarch
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger (optional)

Garnish

  • Green onions or sesame seeds for garnish

Instructions

  1. Cook the chicken: Heat oil in a large skillet over medium heat. Season the diced chicken with salt and pepper. Add the chicken to the skillet and cook until it becomes golden brown and is cooked through, about 5-7 minutes. Remove the chicken from the skillet and set it aside.
  2. Make the sauce: In a bowl, whisk together pineapple juice, soy sauce, honey or brown sugar, cornstarch, minced garlic, and grated ginger until smooth and well combined.
  3. Combine pineapple and sauce: To the same skillet, add the pineapple chunks. Pour in the prepared sauce mixture and bring to a gentle simmer. Cook, stirring occasionally, until the sauce thickens, about 3-5 minutes.
  4. Add chicken back: Return the cooked chicken to the skillet and toss well until all pieces are coated evenly with the thickened sauce and heated through.
  5. Serve: Spoon the pineapple chicken mixture over warm cooked rice. Garnish with chopped green onions or sesame seeds as desired before serving.

Notes

  • Use chicken thighs for a juicier and more flavorful dish.
  • Adjust the sweetness by varying the amount of honey or brown sugar.
  • For a spicier kick, add a pinch of red pepper flakes to the sauce.
  • Make sure to cook the cornstarch mixture until thickened to avoid a runny sauce.
  • This dish can be easily doubled for larger servings.
