Ingredients

For the Sugar Free Blueberry Syrup

  • 2 1/4 cups blueberries (fresh or frozen)
  • 1 cup granulated sweetener
  • 1 cup filtered water
  • 1 tsp lemon juice

For the Blueberry Italian Cream Soda

  • Ice cubes (3-4 per glass)
  • 1 cup club soda
  • 1/4 cup sugar free blueberry syrup
  • 3 tbsp half & half
  • 1/4 cup whipped cream (optional)

Instructions

  1. Make the Sugar Free Blueberry Syrup: In a medium saucepan, combine the water, granulated sweetener, and lemon juice. Stir until the sweetener dissolves completely. Add the blueberries and stir to combine.
  2. Simmer the Syrup: Heat the mixture over low to medium heat, allowing it to simmer gently. Stir occasionally and cook for about 15 minutes, so the blueberries start releasing their juices.
  3. Mash the Blueberries: Using the back of a wooden spoon or a potato masher, crush the blueberries to extract as much juice as possible. Increase the heat to medium and let the syrup simmer for an additional 8 to 10 minutes to thicken slightly.
  4. Strain and Cool the Syrup: Remove the pan from heat and strain the syrup through a fine mesh strainer into a bowl, pressing on the solids to extract all liquid. Allow the syrup to cool to room temperature, then refrigerate for 1 to 2 hours until chilled.
  5. Prepare the Italian Cream Soda: Fill a tall glass with 3 to 4 ice cubes. Pour in club soda until the glass is half full.
  6. Add Syrup and Cream: Pour 1/4 cup of the chilled sugar free blueberry syrup into the glass. Slowly add 3 tablespoons of half & half to create a creamy layer.
  7. Finish with Whipped Cream: Top the drink with 1/4 cup whipped cream, if using, to add an extra creamy and indulgent touch.
