Ingredients

Potatoes

  • Nonstick cooking spray
  • 1 (20 ounce) package O'Brien-style refrigerated shredded hash brown potatoes (such as Simply Potatoes brand)
  • 1 tablespoon olive oil

Vegetables

  • 1 large green sweet pepper

Sauces & Cheese

  • ½ cup pizza sauce
  • ¼ cup finely shredded Parmesan cheese (1 ounce)

Eggs & Garnish

  • 8 eggs
  • Freshly-ground black pepper and/or snipped fresh basil for garnish

Instructions

  1. Preheat and Prepare Baking Dish: Preheat the oven to 375 degrees F. Lightly coat a 3-quart rectangular baking dish with nonstick cooking spray to prevent sticking.
  2. Bake Hash Browns: Spread the shredded hash brown potatoes evenly in the prepared baking dish. Drizzle 1 tablespoon of olive oil over the potatoes and toss gently to combine. Bake for 10 minutes, then stir the potatoes to redistribute. Spread evenly again and bake for another 10 minutes to get them crispy and cooked through.
  3. Prepare Pepper Rings: While the potatoes bake, slice the green sweet pepper into eight rings about 1/4 to 1/2 inch thick. Remove all seeds from the rings to create perfect edible cups for the eggs.
  4. Arrange Peppers and Assemble: Remove the potatoes from the oven and reduce the oven temperature to 350 degrees F. Arrange the pepper rings in two rows on top of the baked hash browns. Spoon 1 tablespoon of pizza sauce inside each pepper ring to add moisture and flavor. Crack one egg into each pepper ring, carefully keeping the yolk intact. Sprinkle a rounded teaspoon of shredded Parmesan cheese over each egg.
  5. Bake Eggs: Return the baking dish to the oven and bake for 15 to 20 minutes, or until the egg whites are fully set and the yolks have thickened but are not hard. Monitor closely to achieve your preferred egg doneness.
  6. Garnish and Serve: Once baked, remove the dish from the oven. Optionally, garnish with freshly ground black pepper and/or snipped fresh basil to add a fresh herbal note and extra seasoning before serving.
