These Zucchini Garlic Bites are a delicious and healthy appetizer perfect for any occasion. Made with shredded zucchini, fresh herbs, Parmesan cheese, and garlic, these bites are baked to golden perfection and served with a flavorful marinara dipping sauce. They are easy to make, light, and packed with fresh flavors.

Ingredients

Main Ingredients

  • 1 cup shredded zucchini, drained well
  • 1 clove garlic, grated fine
  • 1/3 cup breadcrumbs
  • 1/4 cup grated Parmigiano-Reggiano cheese
  • 1 large egg
  • 2 tablespoons chopped fresh chives (or 1 tablespoon dried chives)
  • 1 tablespoon chopped fresh parsley (or 1/2 tablespoon dried parsley)
  • 1 teaspoon chopped fresh basil (or 1/2 teaspoon dried basil)
  • 1 teaspoon chopped fresh oregano (or 1/2 teaspoon dried oregano)
  • Pinch of salt and pepper

For Dipping

  • Marinara sauce

Instructions

  1. Preheat and prepare baking sheet: Preheat your oven to 400˚F (200˚C). Lightly coat a baking sheet with olive oil or non-stick spray and set aside to ensure the zucchini bites won't stick during baking.
  2. Drain the zucchini: Use a box grater to shred the zucchini into a clean towel. Roll up the towel and twist firmly to wring out as much moisture as possible from the zucchini, which helps the bites hold together during baking.
  3. Grate the garlic: Using the small holes of the box grater, grate the garlic finely for even distribution in the mixture.
  4. Mix ingredients: In a medium bowl, combine the drained shredded zucchini, grated garlic, egg, breadcrumbs, Parmigiano-Reggiano cheese, chopped fresh chives, parsley, basil, oregano, and a pinch of salt and pepper. Mix well to evenly incorporate all ingredients.
  5. Form the bites: Shape about a tablespoon of the mixture into small balls by patting with your hands. Place each shaped bite on the prepared baking sheet with some space in between.
  6. Bake: Bake the zucchini garlic bites in the preheated oven for 15 to 18 minutes or until they turn golden brown and are cooked through.
  7. Serve: Remove from oven and serve warm with your favorite marinara sauce for dipping. Enjoy these flavorful bites as a snack or appetizer. This recipe yields approximately 16 bites.

Notes

  • Be sure to drain the zucchini thoroughly to avoid soggy bites.
  • If you prefer, dried herbs can be used but fresh herbs provide a brighter flavor.
  • These bites can be made ahead and reheated in the oven for a few minutes before serving.
  • For a gluten-free version, substitute breadcrumbs with gluten-free breadcrumbs or almond flour.
  • Serve with marinara sauce or a garlic aioli for extra flavor.
