Deliciously soft and buttery cinnamon roll butter swim biscuits baked in melted butter and topped with a creamy cinnamon glaze. These biscuits combine the comforting flavors of cinnamon rolls and the rich texture of buttery biscuits, perfect for breakfast or an indulgent snack.

Ingredients

For the Biscuits:

  • ½ cup (1 stick) salted butter
  • 2 ½ cups all-purpose flour
  • ¼ cup packed light brown sugar
  • 1 Tablespoon aluminum-free baking powder
  • 1 ½ Tablespoons ground cinnamon
  • 2 cups heavy cream
  • 1 teaspoon vanilla extract

For the Glaze:

  • 2 Tablespoons cream cheese, softened to room temperature
  • 1 cup powdered sugar
  • 1-2 Tablespoons milk

Instructions

  1. Preheat and Prepare Dish: Preheat your oven to 450°F (232°C). Lightly spray an 8×8-inch or 9×9-inch oven-safe glass or ceramic baking dish with nonstick cooking spray that contains flour to prevent sticking.
  2. Melt Butter: Melt ½ cup (1 stick) of salted butter in the microwave or directly in the baking dish if microwave safe. Pour the melted butter into the prepared baking dish.
  3. Combine Dry Ingredients: In a medium bowl, whisk together 2 ½ cups all-purpose flour, ¼ cup packed light brown sugar, 1 Tablespoon aluminum-free baking powder, and 1 ½ Tablespoons ground cinnamon until evenly mixed.
  4. Create Biscuit Batter: Add 2 cups heavy cream and 1 teaspoon vanilla extract to the dry ingredients. Stir until a thick, sticky batter forms. If too dry, gradually add a little more heavy cream until the texture is thick and sticky.
  5. Assemble Biscuits: Pour the biscuit dough directly on top of the melted butter in the baking dish. Some butter will overflow onto the dough. Spray your hand with nonstick spray to help evenly spread the dough across the dish.
  6. Score the Dough: Using a knife or spatula, cut the dough gently into nine squares, which makes it easier to separate later after baking.
  7. Bake Biscuits: Place the baking dish on the middle rack and bake for 25-30 minutes. Rotate the dish once halfway through baking for even cooking. If the biscuits brown too quickly, tent with foil to prevent over-browning.
  8. Check Doneness: Biscuits are done when golden brown on top and spring back to the touch. Insert a toothpick into the center; it should come out clean without batter.
  9. Prepare Glaze: While biscuits cool slightly, mix 2 Tablespoons softened cream cheese with 1 cup powdered sugar using an electric hand mixer until smooth. Add 1-2 Tablespoons milk and mix until the glaze is thick but pourable. Add an additional tablespoon of milk if needed.
  10. Glaze and Serve: Drizzle the cream cheese glaze over the warm biscuits. Serve immediately and enjoy the delightful combination of buttery, flaky biscuits with sweet cinnamon glaze.

Notes

  • Use aluminum-free baking powder to avoid any metallic taste.
  • If dough seems too dry, gradually add heavy cream until a sticky batter forms.
  • Spray hands with nonstick spray to help spread sticky dough easily.
  • Oven temperatures can vary; check biscuits a few minutes before the end of baking time.
  • If biscuits brown too fast, cover loosely with foil to prevent burning.
  • Glaze thickness can be adjusted by varying milk quantity to preference.
