Ingredients
Bread
2 slices of bread (sourdough, brioche, or country loaf)
Cheese & Fruit
2 oz brie cheese, sliced
1 ripe peach, sliced thinly
Other
1 tbsp unsalted butter
1 tsp honey (optional)
Fresh basil or thyme (optional)
Instructions
Prepare ingredients: Slice the peach thinly and cut the brie cheese into thin slices to ensure even melting and easy layering.
Butter the bread: Spread the unsalted butter evenly on one side of each slice of bread. If desired, drizzle honey over the buttered side to add a subtle sweetness.
Assemble the sandwich: On the unbuttered side of one slice, layer the brie slices followed by the thin peach slices. This layering helps the cheese melt around the fruit while grilling.
Grill the sandwich: Heat a skillet over medium heat. Place the sandwich in the skillet, buttered side down, and press gently with a spatula. Cook for 3-4 minutes until the bread is golden brown. Carefully flip and cook the other side for another 3-4 minutes until golden and the cheese has melted.
Serve: Remove the grilled cheese from the skillet. Slice it in half and garnish with fresh basil or thyme if desired. Serve immediately for the best flavor and texture.
Notes
Use ripe peaches for maximum sweetness and juiciness.
Choose a sturdy bread like sourdough or brioche to hold the fillings without becoming soggy.
Optional honey adds a delightful complement to the creamy cheese and peaches but can be omitted for a less sweet version.
Fresh herbs like basil or thyme enhance the flavor and aroma beautifully.
Cook on medium heat to allow the cheese to melt without burning the bread.
